WThis is a simplified take on a drink found on a new cocktail list. It's a batch premix which is packed with the essence of the Christmas time, rendering it excellent for hosting a festive gathering. Reserve the remaining syrup for breakfast cocktails, sweets, or to make more rounds of this cocktail.

Serves 10 servings
To make the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Combine every items into a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, take off the stove and let it to cool completely. Pour into a clean bottle, cap it and store in the fridge, it will last for about one month.
To make Batch Mix: Mix the specified liquid ingredients in a big jug, leave to sit for 60 minutes, then pass it through , ideally through muslin, to ensure it's fully clarified.
For serving: Measure 85ml of the premix into your stirring glass filled with ice, and agitate carefully for about 60 seconds to chill. Strain into an cold coupe glass or similar, top with the cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
